Chorizo Spiced Mushrooms

‘Yes Please!’ is my answer when I hear the word Chorizo.
This is a quick take on chorizo that uses our Chorizo Spice blend and it’s super versatile.
From tacos to a rice bowl; or even over nachos these chorizo spiced mushrooms are always a treat!
Ingredients:
2 lbs of Button Mushrooms (Pre-sliced is ok and not necessary)
1 6 oz can of Tomato Paste
1 - 2 Table Spoons of Happyness Tea Company Chorizo Spice
½ Tablespoon Chipotle Pepper from can (optional for extra spice)
Salt and Pepper (as preferred)
Instructions:
1. In a bowl, mix Tomato Paste, Chorizo Spice, and Chipotle Pepper (if used), set aside
2. Slice mushrooms and set aside, if using pre-sliced mushroom go to next step
3. Preheat pan and add a small amount of oil
4. Add mushrooms and move around pan occasionally to avoid burning
5. Once mushrooms start ‘sweating’ (releasing juices), remove from heat and transfer to bowl with tomato paste and spices mix
6. Slowly mix mushrooms with chorizo spice mix ** Careful, contents are hot!
7. Serve chorizo mushrooms, with eggs for breakfast or with tortillas in tacos, Enjoy!
