Al Pastor Marinated Salmon

We love getting our hands on a new spice blend and playing around with all the possibilities of what we can cook up every time we get a new spice mix in the house.

We are big fans of a good Al Pastor Marinade and we are always pleased to see when a new flavor combination comes up.

This Salmon al Pastor is really good on Tacos, rice bowls or with veggies.

Keep some of the marinade and ad some citrus and pineapple chunk to make a quick salsa for those tacos and enjoy!!!

 

Ingredients:

 

3 -4 Salmon Filets

1 6 oz can of Tomato Paste

1 - 2 Table Spoons of Happyness Tea Company Chorizo Spice

3  - 4 oz Pineapple Juice

½ Tablespoon Chipotle Pepper from can (optional for extra spice)

Salt and Pepper (as preferred)

 

Instructions:

1. In a bowl, mix Tomato Paste, Chorizo Spice, Pineapple Juice and Chipotle Pepper

2. Once fully incorporated taste and add Salt & Pepper as desired

3. Add Salmon and let mix sit for 2 hours or overnight if possible in a sealable container in refrigerator

4. When ready to cook. Preheat pan and add a small amount of olive or coconut oil (any other oil or butter works great as well), and sear salmon on each side for about 4 -5 minutes per side

5. Remove Salmon from pan and let sit for a minute before serving

6. Serve Salmon with your favorite side dish and Enjoy!
